{Scrumptious} Ritz Cracker Pie

Don't let the name of this pie scare you. This pie is soooo GOOD. I have to cherish every bite. My sister Ann makes it sometimes for our family functions and everyone has to be polite and share. Its so hard though.
Out of all the recipes that I have, if I ask my husband what dessert I should make this is one he chooses quite often.


Directions:

4 egg whites
1/2 tsp. baking powder
Beat these until stiff but not dry.

Then add: 1 cup sugar

Fold in: 1 tsp. vanilla
1/2 cup chopped up pecans or almonds
20 crushed Ritz Crackers

Pour mixture into a glass pie plate. Bake at 325 degrees for 30 mins.
When it comes out it will be puffy but as it cools it will deflate. Let cool.
Whip 1/2 pint of whipping cream and 2 baskets of sliced strawberries-mix together.
Refrigerate until ready to serve.
TIP: Don't put the strawberry mixture in pie shell for longer than 2 hours.
